Ingredients
CREPES
- 1 cup Hungry Jack® Complete Buttermilk Pancake & Waffle Mix (Just Add Water)
- 2 tablespoons sugar
- 1 cup water
- 2 large eggs
- Butter Flavor No-Stick Cooking Spray
SAUCE
- 3/4 cup Hungry Jack® Butter Flavored Syrup
- 1/3 cup firmly packed brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped pecans
FILLING
- 1 pint (2 cups) vanilla ice cream
Preparation Instructions
- COMBINE pancake mix, sugar, water and eggs in a medium bowl. Whisk until batter is smooth. Heat an 8-inch skillet or crepe pan. Spray with no-stick cooking spray between each crepe. Pour 2 tablespoons batter into preheated skillet, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. Turn to brown second side.
- COMBINE syrup, brown sugar, vanilla and pecans in a microwave-safe bowl. Microwave on HIGH (100% power) 40 seconds. Stir until smooth.
- SPOON about 2 tablespoons ice cream onto center of each crepe. Fold in the four edges of the crepe fold like an envelope: fold up the bottom up toward the center; repeat with left and right sides and the top. Place folded side down on serving plate. Spoon 1 tablespoon maple butter pecan sauce over each filled crepe. Serve immediately.
