Sweet and Savory Monte Cristo Crepes

Ingredients
- 1 cup Hungry Jack® Complete Buttermilk Pancake & Waffle Mix (Just Add Water)
- 2 tablespoons sugar
- 1 cup water
- 2 large eggs
- 1/3 cup prepared mustard
- 3 tablespoons Hungry Jack® Original Syrup
- No-Stick Cooking Spray
- 12 slices deli ham
- 12 slices gruyere, Swiss or cheddar cheese
Preparation Instructions
- HEAT oven to 400°F.
- COMBINE pancake mix, sugar, water and eggs in small bowl, whisking until batter is smooth. Combine mustard and syrup in small bowl.
- COAT an 8-inch non-stick skillet lightly with no-stick cooking spray. Heat skillet over medium heat. Add 2 tablespoons batter, tilting skillet quickly for batter to cover entire base of pan. Cook over medium heat 30 to 60 seconds or until bottom is light brown. Loosen and carefully turn crepe over; cook an additional 30 to 45 seconds or until bottom is light brown.
- SPREAD 1 heaping tablespoon mustard mixture on crepe. Place two slices each ham and cheese on one half of crepe. Fold crepe in half, then fold in half the other direction, forming a triangular shape. Repeat with remaining crepes.
- PLACE crepes on baking sheet and cover with foil. Bake for 15 to 20 minutes, until cheese is melted. Drizzle with syrup. Serve warm.
