Ingredients
- No-Stick Cooking Spray
- 1 pound chicken sausage, crumbled
- 1 pound ground chicken
- 1/2 pound pork chorizo, chopped or crumbled
- 1/4 cup sweet onion, chopped
- 1 small red bell pepper, chopped
- 1 small green bell pepper, chopped
- 1/4 cup ketchup
- 1 large tomato, diced
- 1 clove garlic, minced
- 1/2 tablespoon Cajun seasoning
- 1 1/2 cups Hungry Jack® Complete Wheat Blends Pancake Mix
- 3/4 cup milk
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup shredded cheddar cheese
Preparation Instructions
- HEAT oven to 400°F. Coat 8-inch square baking dish with no-stick cooking spray.
- COOK chicken sausage, chorizo, onion, red and green pepper in skillet over medium heat, stirring occasionally, 6 to 8 minutes or until meat is thoroughly cooked and vegetables are tender. Stir in ketchup, tomatoes, garlic and seasoning. Cook for 6 minutes over medium-high heat. Spread evenly in prepared dish.
- WHISK pancake mix and milk in large bowl until blended. Spread over meat mixture. Sprinkle with Monterey Jack and cheddar cheese.
- BAKE 15 to 20 minutes or until golden brown and cheese is melted.
