Ingredients
- 1 (7 oz.) package Hungry Jack® Easy Pack™ Funfetti® Holiday Buttermilk Pancake Mix
- 1/2 cup coarsely chopped sliced almonds
- 1/4 cup butter, softened
- 1/2 cup water
- 1/8 teaspoon almond extract
- 1/3 cup Seedless Strawberry Jam
GLAZE
- 2/3 cup powdered sugar
- 2 to 3 teaspoons water
- 1/4 teaspoon grated lemon peel
- 1/8 teaspoon cinnamon
PASTRY
Preparation Instructions
- For Pastries: HEAT oven to 425°F. Line baking sheet with parchment paper. Combine pancake mix, almonds, butter, water and almond extract in large bowl until smooth.
- DROP 2 rounded tablespoonfuls batter side by side on prepared baking sheet so that mounds of batter are touching. Repeat step to form 12 pastries. Make shallow well in center of each mound with back of spoon dipped in water; fill each with 1/2 teaspoon jam.
- BAKE 8 to 10 minutes until golden brown. Remove to wire rack to cool completely.
- For Glaze: WHISK powdered sugar, water, lemon zest and cinnamon in small bowl until combined. Drizzle over pastries. Let rest 10 minutes until glaze is set.
