Salted Caramel Apple Muffins
Ingredients
MUFFINS
- No-Stick Cooking Spray
- 1 cup unsweetened apple sauce
- 1 cup apple, peeled and chopped
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup water
- 1 large egg, beaten
- 2 cups Hungry Jack® Complete Buttermilk Pancake & Waffle Mix (Just Add Water)
- 1 cup chopped pecans
- 1/2 teaspoon baking powder
- 1/2-1 teaspoons apple pie spice or cinnamon
GLAZE
- 2 tablespoons unsalted butter
- 1/4 cup Hungry Jack® Original Syrup
- 2 tablespoons sugar
- 2 tablespoons heavy cream
- Coarse sea salt, for garnish
Preparation Instructions
- For Muffins: HEAT oven to 350°F. Coat 16 muffin cups with no-stick cooking spray.
- COMBINE applesauce, apples, sugar, brown sugar, water and egg in large bowl. Add pancake mix, nuts, baking powder and apple pie spice stirring just until moistened. Divide batter evenly into prepared baking cups. Bake 20 to 25 minutes or until toothpick comes out clean.Cool 5 minutes. Remove pans to wire rack to cool completely.
- For Glaze: MELT butter in small heavy saucepan over medium-low heat. Add syrup, sugar and cream. Bring to gentle boil. Cook 2 minutes, stirring constantly. Remove from heat. Spoon glaze over muffins. Sprinkle with sea salt.
